Avocado Cocoa Waffles

Pretty much every day, for at least one meal, my kids request pancakes.  It’s my fault, really.  I say yes a lot. :). Last week, after a hot summer day, H requested waffles for dinner.  I thought for a second and then said, “Ok!”  He watched me toss an avocado into the blender and sighed, “Mooooommm.”  He says that when he sees me making food a little differently than he envisioned.  I translate it as, “Can you just make “normal” food for once?”  As it happens, I cannot.  “Trust me,” I told him. “You’re gonna love this.”  And he did.  In fact, the whole family loooved this recipe.  The avocado made for a really moist waffle.  It’s not overly sweet, but still has a light chocolatey taste.  Really delicious. :)

Avocado Cocoa Waffles

20 min, serves 4


1 avocado

1 can full fat coconut milk (or sub regular milk)

3 T melted butter

2 eggs

1 t salt

1/2 t cinnamon

1 1/2 t vanilla

2 T cocoa powder

2 T maple syrup

1 t baking powder

1 1/3 c spelt flour


  1. Scoop out avocado and place in blender.  Add coconut milk, eggs, butter, vanilla, and syrup and puree until smooth.
  2. In medium bowl, mix all dry ingredients together.  Pour wet ingredients into dry ingredients and fold together until incorporated.
  3. Scoop about 1/2 c per waffle.
