I made country style ribs a few days ago and they were a total fail. The meat got really dry. One of my favorite fixes for overcooked meat is cutting it up small and stir frying it with veggies. This made a great side dish for eggs and would also be really good over rice. I sauteed the veggies in oil with fresh garlic, salt, and pepper and then added the meat. As the pan dried out, I added a tablespoon of coconut aminos and stirred it all together. Kitchen amateurs like me have to have tricks like this for our failures. 😄 It works so well! 👩🍳

I finally convinced the kids to like scones with these Strawberry Oat Scones. 🍓🍓
They are sweetened with only 2 T of coconut sugar and a honey drizzle on top. Something about summer makes me want fruity baked goods around all the time. 😎 Recipe below:
2 c spelt flour
1/3 c almond flour
1 c oats
1/4 t salt
2 T coconut sugar
2 T baking powder
1 c applesauce
6 T butter
1/4 t almond extract
2 c chopped strawberries
Honey to drizzle on top
1. Turn oven to 400 F
2. Mix dry ingredients in a large bowl.
3. Chop the cold butter into small pieces and cut it into the dry ingredients until there are no large chunks.
4. In a separate bowl, mix the wet ingredients. Pour the wet into the dry and fold together.
5. Fold in the strawberries
6. Shape the dough into a ball and place on parchment paper on a cookie sheet.
7. Flatten the dough into a large round, about 1" thick. You can place another sheet of parchment on top to help shape it without sticking too much.
8. Cut it into triangles, however big you want them.
9. Bake for 18 min
10. Remove from oven and let cool on cooling rack.
11. Once cooled, drizzle generously with honey. 🍯

Today's pile o' goodness is greens, peaches, almonds, sunflower seeds, goji berries, and my new favorite cheese: cotija. 🧀🧀♥️ I also had a homemade protein bar on the side. It has simple ingredients and is sweetened with maple syrup. You can totally have it for breakfast and drink the chocolate milk out of your bowl when you're done. 👌

We recreated the NWS Salad from @northernwaterssmokehaus at home today. It's my favorite meal in all of Duluth. Smoked salmon, pickled ginger, wasabi mayo, cilantro, and oh so much more. It was almost as good as the real deal. .

Chuck roast has become one of my go-to weeknight meals. I brown it early, before going to work, seasoned with salt and pepper. Then I put it in a large baking pan with beef stock (about halfway up the roast) and cover it with foil. I bake it at 225 F for the entire day! That usually means about 10 hours. It's always delicious, never dry. Sometimes I'll add onions and potatoes. Most often I'll make mashed potatoes when I get home. Today I made some roasted parsnips, rutabaga, and sweet potato. Yum. Plus, there's always leftovers for lunch the next day. 👍
