We found so many ripe juneberries on the trails yesterday! I turned half of them into a honey-sweetened jam this morning for on our bagels.
1 1/3 c berries, 1 1/2 T @ballcanning Real Fruit Pectin, 3 t lemon juice, and about 1/3 c honey. I boiled it all for about a minute and that's it!

I love tacos, but usually dislike the taco shells. I mean the cheap grocery store kind that taste like cardboard. I've decided making tortillas is the best way to go. A big ol' pile of meat and veggies on greens is one of my favorite summer meals. 🥗
My go-to ingredient to make this interesting is toasted sesame oil. It gives it a roasty asian-style taste. I started the veggies in olive oil and then added the sesame oil and coconut aminos. I cooked the beef separately so I could strain out some of the grease and then stirred it into the veggies with sesame seeds and cashews. I drizzled a little more toasted sesame oil and red wine vinegar on the greens, but that's it! Delish and lasted for days. 👌

I made country style ribs a few days ago and they were a total fail. The meat got really dry. One of my favorite fixes for overcooked meat is cutting it up small and stir frying it with veggies. This made a great side dish for eggs and would also be really good over rice. I sauteed the veggies in oil with fresh garlic, salt, and pepper and then added the meat. As the pan dried out, I added a tablespoon of coconut aminos and stirred it all together. Kitchen amateurs like me have to have tricks like this for our failures. 😄 It works so well! 👩🍳

I finally convinced the kids to like scones with these Strawberry Oat Scones. 🍓🍓
They are sweetened with only 2 T of coconut sugar and a honey drizzle on top. Something about summer makes me want fruity baked goods around all the time. 😎 Recipe below:
2 c spelt flour
1/3 c almond flour
1 c oats
1/4 t salt
2 T coconut sugar
2 T baking powder
1 c applesauce
6 T butter
1/4 t almond extract
2 c chopped strawberries
Honey to drizzle on top
1. Turn oven to 400 F
2. Mix dry ingredients in a large bowl.
3. Chop the cold butter into small pieces and cut it into the dry ingredients until there are no large chunks.
4. In a separate bowl, mix the wet ingredients. Pour the wet into the dry and fold together.
5. Fold in the strawberries
6. Shape the dough into a ball and place on parchment paper on a cookie sheet.
7. Flatten the dough into a large round, about 1" thick. You can place another sheet of parchment on top to help shape it without sticking too much.
8. Cut it into triangles, however big you want them.
9. Bake for 18 min
10. Remove from oven and let cool on cooling rack.
11. Once cooled, drizzle generously with honey. 🍯
