Crockpot Shredded Golden Chicken

I believe we should all cook at least one crockpot meal per week.  Why?  Because it's so easy!  And it's a wonderful feeling to walk into your house in the evening and smell dinner waiting for you.  It must have some psychological benefits to it.  I'll look into it.

My husband, B, loves Taco Tuesday.  He likes rhythm and routine, but, mostly, he loves tacos.  So, I've been trying to get in the habit of making some sort of crockpot meat on Tuesdays for us to throw into tacos that night.  This recipe is great because it has a great taco-taste, but it isn't so strong that you feel like that'll all you can do with it.  Below I'll show you some pictures of how I used the leftover chicken.

Oh, and the golden piece.  I love turmeric and I hope I can convince you to love it too.  It is not a potent taste so it's very easy to add to a variety of dishes.  Plus it has awesome medicinal and nutritional value!  It is an anti-inflammatory and an antioxidant.  It can help prevent diseases!  It's pretty cool.  So, why not mix it in with your dinner tonight?

Crockpot Shredded Golden Chicken

6-8 hours, serves 6

Ingredients:

  • 4 large frozen chicken breasts
  • 1 1/3 c bone broth (or use 1 c regular broth)
  • 1 T cumin
  • 1/4 t cayenne
  • 1 t ground turmeric
  • 1 1/2 t salt
  • 1/2 t onion powder
  • 1/2 t garlic powder
  • 1/2 t paprika
  • handful of cilantro, chopped

Dlirections:

1. Place all ingredients, except cilantro, in crockpot on low.

2. After 6-8 hours, use two forks to shred the chicken.

3. Stir in the cilantro.

Shredded chicken on wilted greens with avocado, cilantro, an egg, and kimchi!  Made a great breakfast salad.
