Chocolate Peanut Butter Popcorn

Happy ice day!  Only in Duluth do we have shorts weather over the weekend and an ice day the following week.  That’s why we love it here, right? ;)

I’ve been trying to pull together some of my kids’ favorite recipes for you.  As I’ve said before, I almost make a game of inventing nutritious snacks and meals for my kiddos.  Sometimes it’s a failure but not always!  This snack is one of their favorites.  Ok, you could call it a treat.  Whenever you decide to have it, with a movie, for dessert, it’s a sure win.  Watch out for sticky fingers when they’re done.  This is also a totally acceptable adult snack.  I have been known to sit and eat a bowl by myself.  Pairs well with Gilmore Girls or your favorite comedy show.

Also...I sometimes substitute the cocoa powder for Chocolate Hemp Protein Powder.  Hemp has some pretty awesome health benefits you can read about here.

Chocolate Peanut Butter Popcorn

Ingredients:

1/3 c popcorn kernels

1/3 c coconut oil

3 T honey

2 1/2 T cocoa powder

2-3 T powdered peanut butter

salt to taste, optional

Directions:

  1. Pop kernels in air popper.
  2. Melt coconut oil in small microwaveable bowl.  Add honey and stir until well combined.  Stir in cocoa powder. (Don’t add the powdered peanut butter here or the consistency will be hard to work with)
  3. Pour oil mixture over the popcorn and stir to coat it all.
  4. Sprinkle the powdered peanut butter and salt over the popcorn and stir to coat.
