Paleo Maca Cocoa Pancakes

You may have noticed by now that we are a family of pancake-lovers.  We usually have pancakes at least once a week.  They really can be a hearty, healthy breakfast for everyone if you do it right!  I have a lot of tricks I use.  I try to make our pancakes protein heavy, often grain free or gluten free.  We always pair our pancakes with fried eggs to make them extra filling.  B always puts almond or cashew butter on his pancakes.  With pancakes this way, 1 or 2 pancakes is usually enough.

    Maca powder might not be in your spice drawer, but it should be!  You can buy it in bulk at the Whole Foods Coop.  It pairs very well with cocoa because of its light malty taste.  Maca Root is a superfood with protein, carbs, essential amino acids, calcium, magnesium, vitamins, and so much more!  It has been known to help balance hormones and improve energy and mood.  So why not throw some in your pancakes? :)

Maca Cocoa Pancakes

20 min, serves 3-5

Ingredients:
3 eggs
1 banana, mashed
1/4 t salt
1 t baking soda
1/2 T maca root powder
4 T cocoa powder
1/4 c coconut oil, melted plus some for frying
1/4 t cinnamon
1 c almond flour
1 t chia seeds

Directions:

1. Mix all ingredients together in large bowl.  Fry in coconut oil, flipping once.  Top with powdered coconut milk, if desired!
