Spirulina Truffles

 

It feels good to be back in Minnesota after a week in Arizona.  The desert was awesome.  I had never been before and it was really amazing to see such a different landscape.  Duluth has been welcoming us home with cool breezes and chilly nights.  It actually feels really good after being in Arizona for some record breaking heat.  I actually made the kids hot chocolate with their breakfast this morning because they woke up cold.  Haha, I do love living here. :)

I went to look for my Spirulina Truffle recipe recently and realized I posted it to Instagram and not on the blog!  I apologize.  This little delicacy is too delicious to keep to myself.  I avoid using sugar in most of the food I make, but that does not mean I don't occasionally indulge my sweet tooth.  Ok, sometimes "occasionally" becomes "frequently."  These Spirulina Truffles (as long as you don't eat the entire batch yourself) are perfect treats to have around.  Spirulina is very nutrient dense, has antioxidant and anti-inflammatory properties, and lots of other benefits.  Why not put it in your chocolate dessert?

Spirulina Truffles

Ingredients:
7 dates, pitted and chopped
1/3 c cocoa powder
1/4 t coarse salt
1 t spirulina powder
1 c walnuts
2 T coconut oil
Shredded coconut for topping

Directions:

1. Blend all together.

2. Shape into balls.

3. Press into shredded coconut.

4. Place in freezer for 30 min. Store in refrigerator.
