Roasted Turnips with Truffle Oil
/It takes me most of January to come up with my New Year’s resolutions. Although, I hear they are called ‘intentions’ now. So, I’m working on my New Year’s intentions. I have two so far, but I’m sure more will come. The first is to create less waste. I will share about this more next time and the specific steps I’m taking. The other is to parent without fear. I realize parenting without fear 100% of the time is impossible, but it is my goal to push fear aside when it tries to overtake me.
I’ve had to face several decisions about parenting in the past year that have caused me a lot of anxiety. I’ve had to reflect on what I truly believe about parenting and children. Throughout this process I’ve realized how often fear hovers over my parenting decisions. I think and overthink what my kids encounter and what decisions I should make for them.
“There is no fear in love, but perfect love casts out fear.” My kids will encounter so much in life that I can’t handpick for them. Living in fear of parenting the “right” or “wrong” way will do absolutely nothing. Yes, I hope I make good decisions and guide them well in life. But allowing fear to plague my thoughts is wrong and completely against how God wants me to live.
So, in 2018, I hope to turn my back on fear and parent with more freedom. And eat more veggies. You can always eat more veggies.
Roasted Turnips with Truffle Oil
25 min, serves 3-4
Ingredients:
3 turnips, chopped
2 T olive oil
1/2 t salt
1/2 t mustard powder
1/4 t garlic powder
3/4 t dried parsley
Cracked black pepper
1/2 T truffle oil
Directions:
1. Heat the oven to 400 F
2. Toss the turnips in the olive oil and spices. Pour them on to a baking sheet and roast in the oven for 20 min.
3. After 20 min, move to the broiler for 3 min.
4. Remove from the oven and pour into a serving dish
5. Drizzle with truffle oil
