Paleo Chocolate Chip Pancakes

Spring is in the air, which means healthy habits are coming more naturally to me.  I no longer feel the constant urge to eat candy under a blanket and watch Netflix for hours on end.  I have so much more motivation to exercise and eat well.  The longer days make a huge difference.  It’s amazing how much more energy I have to make dinner when it’s light outside.

This pancake recipe came about on an unexpected day off.  Baby E was very sick so I got to stay home with her.  Like any parent, I enjoy the snuggly part of sick days.  We sat together on the couch for an extra long time with no agenda.  She napped quite a bit so I enjoyed the beauty of silence.  This is very rare for me these days as the twins must be in the prime inquisitive stage.  I am usually being asked 3-4 questions at once, with voices getting louder with every repeat of what they are trying to say.  Needless to say, I really enjoyed my quiet time that day.  I wanted something delicious to eat and chocolate chip pancakes happened.  They are so delicious, it’s wonderful.  You can buy paleo chocolate chips if you would like.  I try to find chocolate chips with simple ingredients and, ideally, no soy lecithin.

Paleo Chocolate Chip Pancakes

Serves 4

Ingredients:

2 eggs

1/2 c butter, melted plus some for grilling

1 c non-dairy milk

1 t vanilla 

1 t baking soda

1 T coconut sugar

2 c almond flour

1 c chocolate chips

Directions:

  1. Whisk eggs and milk together in medium bowl
  2. Add vanilla, baking soda, and coconut sugar and whisk to incorporate.
  3. Add the almond flour and stir until fully combined.
  4. Add chocolate chips and stir until fully combined.
  5. Heat butter on medium heat in nonstick skillet.  Scoop about 1/3 c of the batter for each pancake.
