Grain Free Meatloaf, Whole30 & Paleo approved

Cold weather routines are starting to set in.  It can be so hard to find energy after the kids are tucked in bed and it’s so dark outside.  B and I have been watching tv less and less.  We do give ourselves grace that we’re in a busy season of life and watching a show together in the evening is totally fine!  But, we don’t want it to be a daily habit.  One of my favorite new routines we’ve started is listening to Malcolm Gladwell’s Revisionist History podcast.  It’s really easy to listen to, pretty quick, and a great conversation starter.  I’m not saying every night we listen to educational podcasts drinking tea.  We also like to rewatch episodes of How I Met Your Mother.  But we’re integrating new routines into our week that are relaxing and connecting for us.  If you have any late night ideas for tired parents in the winter, send them my way! (No need tell me the obvious one. :) )

Here’s a Whole30 approved recipe for you!  We had this meatloaf this week with pan seared brussel sprouts and squash.  It was so good and felt like fall!

 

Grain Free Meatloaf

Ingredients:

1 1/2 lbs ground beef

1 egg

1/2 t salt

1/4 t pepper

1/2 t ground mustard

2 T tomato paste

1/2 onion, diced

2 garlic cloves, minced

1 T coconut aminos

Directions:

  1. Heat oven to 350 F
  2. Place all ingredients in large bowl and mix thoroughly with hands.
  3. Grease 8 or 9” loaf pan, shape meat into loaf shape, and place in pan.
  4. Bake meatloaf for about 55 min, or until meat thermometer reads 165 F
