Paleo Lemon Poppyseed Muffins

My mom was always baking when we were growing up.  Fresh bread, cookies, muffins, you name it.  Everything was from scratch and full of healthy ingredients.  I have a lot of comforting memories that include smells of baked goods wafting out of the kitchen.  It's because of those memories that I've wanted my kids to experience similar things.  There's something wonderful about arriving home from school and smelling fresh baked goods.  I don't exclusively bake Paleo, but I do incorporate it a lot.  These muffins are completely Paleo with just a touch of sweetness.  My kids always get excited about poppyseed muffins.  These were waiting on the counter when they got home from preschool and they loved it!

Paleo Lemon Poppyseed Muffins

30 min, makes 10-12 muffins

  • 2 eggs, beaten
  • 1/2 c almond milk
  • juice of 1 lemon
  • 1/4 c olive oil
  • 1 t vanilla
  • 2 T maple syrup
  • 1 1/3 c almond flour
  • 2 T ground flaxseed
  • 1/4 c tapioca starch
  • 1 t baking soda
  • 1/2 t salt
  • 2 T poppyseeds
  1. Preheat oven to 350 F
  2. Mix dry and wet ingredients separately, then stir gently to combine.
  3. Pour batter into greased muffin tin.
  4. Bake for 20-22 min or until knife inserted comes out clean
  5. Cool immediately on cooling rack
