Roasted Broccoli & Almonds
/We are on day 30 of Whole30! What?! Ok, the first two weeks went by very slowly, but the last half flew by! I think by then, the changes became routine. One of the biggest things I've learned is that it's worth making a little extra effort to make the food we are eating more delicious. Broccoli is our example of the evening. I'm often rushed to get dinner together, the kids are hungry and getting wild, the baby just wants to be held, the dog is sniffing everything I pull out. Gah! I'll quick steam some veggies, toss on a little salt and pepper and be done. And...it's fine, just fine. But, here's what I've learned, a few little tricks and those veggies go from "fine" to "I can't make enough because the whole family wants a quadrouple portion." This broccoli recipe came from that realization. My kids kept asking for more and I had to tell them there was none left! I call that a success.
Roasted Broccoli & Almonds
serves 4-6, 45 min
Ingredients:
- 4 heaping cups chopped broccoli
- 3 T olive oil
- 1/4 t salt
- 2 T coconut aminos
- 1/4 t pepper
- 1/3 c almonds, chopped
Directions:
- Preheat oven to 400 F
- Spread broccoli in 9x13 pan
- Add rest of ingredients and stir so everything is coated in oil
- Roast in oven until nicely browned and broccoli is soft, about 40 min
