Snap Pea, Chicken, & Coconut Sauce

Wow, it’s raining hard in Duluth today.  The kids and I ran some errands this morning and have been building forts, doing puzzles, and playing “house” ever since.  Playing “house” can mean just about anything.  Usually it involves the twins being some sort of animals and I am their owner.  I rescue them from the “mean pet shop owner” and take them home with me.  We play this game a lot.  I can never find the right word to describe those moments in parenting that are…tedious?  mundane?  boring?  None of them are quite right.  It’s those times when you want so badly to be fully engaged with your kids but your brain just can’t connect to their level of play anymore.  They are so deep in their imagination but, as an adult, I’m not sure it’s possible to get there anymore.  It makes me wonder when my mind made that switch.  Did it happen gradually, or does it just shut off one day?  There are a lot of things I like about being an adult, but my changing imagination makes me a little sad.  Eek, maybe it’s the rainy day getting to me too!

I posted this recipe on Instagram a few days ago but forgot to put it up here!  B and I have been making this recipe since we were first married.  We didn’t eat meat for awhile and this recipe was great because the full fat coconut milk made it so filling.  Now that we eat meat again, I added chicken.  It’s good either way!

Snap Pea, Chicken, & Coconut Sauce

10 min, serves 3-4

Ingredients:

1 T olive oil

1/2 in fresh ginger, minced

2 garlic cloves, minced

1/2 red pepper, chopped

1 c chopped snap peas

1-1 1/2 c cooked chicken

1 1/2 c full fat coconut milk

salt and pepper to taste

rice or cauliflower rice for serving

Directions:

  1. Heat olive oil in skillet.
  2. Add ginger and garlic and cook for a few minutes.
  3. Add red pepper and cook for another minute.
  4. Add snap peas, coconut milk, and chicken and bring to simmer.  Let simmer about 2 minutes, so that the chicken gets hot all the way through.
  5. Serve over rice or cauliflower rice.
