One Pan Broccolini & Sausage

We returned last night from a great weekend in Chicago.  The kids had so much fun playing with Grandma and Grandpa, and B and I really got to relax and enjoy the company of family.  We celebrated a beautiful couple’s marriage and enjoyed some top notch Chicago-style pizza at the reception.  It was so much fun.

My in-laws spoil us with great food whenever we visit them.  It was really nice not to be the main chef for a few days.  But, I must say, I missed cooking!  I really love to cook and create so, the reprieve was lovely, and now I’m ready to get back at it!  We ate through our fridge before leaving so today I stocked up, primarily with veggies and meat.  I spotted some broccolini at the Coop and decided that would be the perfect veggie for lunch today!  I paired it with a sweet potato and some andouille sausage and, oh man, it was delicious.  I actually finished it about 2 minutes ago and I’m trying to tell myself I made enough for two people, although I would really like another helping.  We’ll see how this goes….

One Pan Broccolini & Sausage

25 min, serves 2

Ingredients:

2 T olive oil

1/2 onion, diced

1 sweet potato, peeled and chopped small

4 broccolini, chopped into 1-2” pieces. (I like mine bigger because it’s so pretty)

2 andouille sausages, cut into circles

1 T coconut aminos

salt and pepper to taste

Directions:

1. Heat olive oil in skillet on medium heat.

2. Add onion and sweet potato and cook for about 15 minutes with a lid on, stirring frequently, until sweet potatoes are softened.  Add a little more olive oil, if necessary.

3. Add broccolini, sausage, and coconut aminos, cover, and continue to cook for about 6 more minutes, or until broccolini has softened. 

4. Season with salt and pepper, to taste
