Asian-Style Salad Dressing

I have not been very attentive to posting recipes lately.  We’ve had a lot of family in town for the past week and I try to use my computer as little as possible during that time.  B’s mom came into town and rescued us with several days of childcare when we both had to work.  I can’t tell you how amazing and helpful that was.  Then B’s brother and sister-in-law came.  Oh, with their fluffy ball of a puppy.  We had a great few days playing outside, sitting at the beach, eating good food, drinking good drinks, and watching our dogs wrestle each other from morning til night.  Good times. :)

I think I have mentioned before that I love kimchi and pickled ginger on salads.  They add such a huge burst of flavor and turn a boring salad into a meal you crave.  This is my go-to Asian-style dressing.  If I happen to have smoked salmon around as well, the perfect salad can be made.  Try it.

Asian-Style Salad Dressing

Ingredients:

2/3 c olive oil

juice of 1 lemon

3/4 t salt

2-3 garlic cloves

2 T toasted sesame oil

1/4 t pepper

1/3 c plus 1 T apple cider vinegar

2 T maple syrup

1/2 t minced ginger (optional…if uncooked fresh ginger is too much, you can definitely leave it out)

Directions:

  1. Place all ingredients in mason jar, screw the lid on tight, and shake until fully combined.
  2. Pour desired amount on salad.
