Perfect Paleo Pancakes
/I am a pancake experimenter. You name it, I've probably tried it. My kids love pancakes and I love trying to make them as nutritious and protein filled as possible. It's a fun little challenge that has ended in failure several times. However, I recently discovered tapioca starch and that has made a big difference. It helps hold the shape nicely and gives the pancakes a little more of a crisp, or textured, outside. These pancakes are delicious, simple, and filling. They are thin but not flat and dense. And one recipe with a side of eggs filled up our family of five! Even Mom got some. :)

Perfect Paleo Pancakes
10 min, serves 4
- 2 eggs
- 1 c almond milk
- 3 T coconut oil, melted plus some for frying
- 1/2 t salt
- 1 t cinnamon
- 1 t baking soda
- 1 1/4 c almond flour
- 4 T tapioca starch
- pure maple syrup for topping, if desired
- Combine wet ingredients in bowl and whisk together.
- Add dry ingredients and stir together until smooth
- Heat extra coconut oil on frying pan and add dollops of batter (about 1/4 c each)
- Flip once
