Perfect Paleo Pancakes

I am a pancake experimenter.  You name it, I've probably tried it.  My kids love pancakes and I love trying to make them as nutritious and protein filled as possible.  It's a fun little challenge that has ended in failure several times.  However, I recently discovered tapioca starch and that has made a big difference.  It helps hold the shape nicely and gives the pancakes a little more of a crisp, or textured, outside.  These pancakes are delicious, simple, and filling.  They are thin but not flat and dense.  And one recipe with a side of eggs filled up our family of five!  Even Mom got some. :)

Perfect Paleo Pancakes

10 min, serves 4

  • 2 eggs
  • 1 c almond milk
  • 3 T coconut oil, melted plus some for frying
  • 1/2 t salt
  • 1 t cinnamon
  • 1 t baking soda
  • 1 1/4 c almond flour
  • 4 T tapioca starch
  • pure maple syrup for topping, if desired
  1. Combine wet ingredients in bowl and whisk together.
  2. Add dry ingredients and stir together until smooth
  3. Heat extra coconut oil on frying pan and add dollops of batter (about 1/4 c each)
  4. Flip once
